Pork Enchilada

Pork Enchilada

Ingredients

* 2-3lb pork tenderloin
* 1 tsp garlic powder
* 1 tsp seasoned salt
* 1 tsp cumin
* 1 tsp chili powder
* 2 small cans la victoria enchilada mild sauce or 1 big can.
* tortillas
* shredded cheese.

How To:

1. Trim fat from pork, and cut it in half.
2. Place both half’s in slow cooker and sprinkle with all ingredients Except sauce.
3. Cook for 7 hours on low.
4. Remove pork and discard all juices. Return pork to slow cooker and shred. Add about 1/2 cup or more of the sauce to pork.
5. Cook on high for an additional hour.
