An Easy Quick Recipe Idea – The Kids Will Love This Frito Pie

Are you in need of an easy quick recipe for a family dinner? This recipe is definitely a kid style recipe, portable and fun to eat.

I first encountered Frito Pie many years ago in a restaurant in Texas, near the Mexican border. When I ordered it, I was quite shocked when I was presented with the chili served over the chips inside the bag. Before I could get over my shock, the kids were all wanting it. Who am I to stand in the way of a kid eating his dinner? I never understood why it was called “pie”, it’s definitely too messy to be considered pie, but whatever it is – it’s good.

Frito Pie 1 pound ground beef

1 package chili seasoning mix

1 can diced tomatoes

1 can kidney beans, drained and rinsed

6 individual packages of corn chips or 1 large bag

cheese, optional

Brown the ground beef. Add the chili seasoning, tomatoes, and kidney beans. Simmer 10 minutes. Serve the chili mix over the corn chips. The way I was taught to eat this was to open the bag of corn chips and pour a ladle of the chili mixture into the bag. Hand one bag of chips and chili to each person along with a fork. A very informal meal, but quick and fun to eat. I like to add cheese on top of the chili but this is not part of the original presentation.
