Hmmmm…..oven-baked enchiladas, here in mexico we fry the tortillas in vegetable oil, not very healthy, …..i’m mexican and i’ll try your recipe, sounds yummy,….chicken stock on top, never heard about that, i know for a fact chicken stock brings out the flavor in mole, but enchiladas, thats new! Don’t listen to any negative comments. I’m Mexican, and I found your recipe to be very easy and it looks delicious. It’s also a great recipe for other ppl like yourself who do not have access to Mexican cheeses or sauces.. Keep up the good work!

Thank you for your kind comment. I appreciate that mexicans do not use cheddar or monterey cheese but I live in europe and Mexican cheese (e.g. queso oaxaco) is not that easy to come by.
I would have used mole sauce, but again in europe, it is not readily available. It is an art to make mole sauce, but with 4 children, time is a luxury.

Your recipe sucks! you call that cheese enchiladas? those arent mexican because mexicans dont use chedar or monterey cheese. or enchilada sauce. That is some sort of americanized tacos with sauce over them.
