Easy and quick. Corn tortillas, cream of chicken (or mushroom) soup, green chilis Ortega diced, milk, grated cheese. The size of your baking dish determines how many you can serve, what else is on your menu and how much of the ingredients are on hand.

No , it was green chillies in a can.Yeh I love swiss cheese on everything lol thats why I did this.But it was really good and some of my family never had Enchiladas before .I love Mexican food so if you any other receipe , please let me know,your vids were straight to the point and I liked that because I’m easily distracted lol

Wonder if your chili was red chilies? I guess it doesn’t matter but the green chili Oretga is a can of a fairly mild green chili.
we love swiss so probably will try that ourselves. the grated is just easy but any cheese will do.

Yes, Im doing my best to cook more often.
For the Chili , I had no problem , My girlfriend lives beside a little Idian store were you find everything when it comes to spices/chilly/peppers…the only thing I did a little bit different was I used thin slice of swiss Cheese instead of grated cheese, I was afraid that it wont melt the proper way but the result was really good,they all loved it.Next time I’ll try with regular grated cheese just to see. Thanks again!

We enjoy sharing our cooking experiences. My video cam works so have many saved in there but the program inside my HP is trashed so can’t make the movies except on Ron’s old computer. I’ll be back at it soon… just a bother.

I did this for my family the other night ! I live in Dublin , Ireland and its not everyday we eat Mexican food so everybody loved it! Thanks for the vid,it was real easy to make too (I’m a 27 y old guy , cooking dosnt come really naturally to me).Thanks , you are great!You should have your own cooking show!!

I have a recipe similar to this. I combine the chiles, sour cream, cheese, chicken, crm of chicken soup, garlic powder then place the mixture in large tortilla shells, fold, place in pan, cheese on top then bake. I guess it is the same thing as a chicken enchailada.Takes out the frying-I guess I am lazy-LOL! I usually put lettuce and hot sauce on mine-delicous!
One of the recent LPBW episodes had Amy making c. enchailadas and Matt couldn’t wait-it was funny! Amy seems like a good cook. also.

You are so right.. i usually bake it longer but on the videos i’m trying to show how to fix things that don’t take long. We have found that the longer it sits before baking and the next day after being refrigerated after baking is still delicious. some like things more saucy (not sloppy!!) but when cooked longer it is more firm and cuts into nice squares.

thanks for the great recipe..the kids loved it..I used cream of mushroom..but will use cream of chicken soup next time. The only thing is, I cooked it longer than 15 mins. Think it was 45 mins total. This way it wasnt sloppy when I served it. Did anyone else cook it longer for that reason? Once again.. thanks from Canada

Cream of chicken is the best but for vegetarians you can omit the chicken and use cream of celery or cream of mushroom and use mushrooms instead of chicken. Or just plain … the chilis and cheese are the important things.

Yes, in face we like them very much but corn tortillas work the best with this recipe. i think the flour ones would be too soggy.
