In New Mexico cheese enchilada’s are the norm. I’ve eaten at the restaurant there food is as good as it looks. And as for the saute pan all that’s in it is melted shortening or lard or vegetable oil(corn probably) I doubt that pans used for anything else anymore.( and at 15-20 bucks for that type of pan it’s served it’s usefull life)
